DOMAINE DE CHASSORNEY

Domaine de Chassorney is run by Frédéric Cossard and located in Saint-Romain in Burgundy-Franche-Comté. The winemaker produces wines in the most natural way possible, without using chemical fertilizers or weed killers.

The harvest is carried out manually by twenty people who work at the Domaine. The Domaine de Chassorney is renowned for its production of prestigious wines, such as Puligny-Montrachet and Pommard.

Here are some of the white wines produced by the Domaine: Meursault Les Genevrières, Bourgogne Aligoté, Abbaye de Morgeot; and red wines such as Volnay, Vosne-Romanée Champ-Perdrix, Beaune Bressandes.

For the vinification of its wines, the Estate works in full harvests, without adding yeasts to give the wines their personality according to the vintage.
Domaine de Chassorney uses our model of MC 17 concrete ovoid wine tank as well as conical wood vats.

Saint-Romain en Bourgogne

The ovoid winemaking tank model chosen by the Domaine de Chassorney is one of the emblematic models proposed by Nomblot. Indeed, this wine vat, by its particular lines, allows a breeding without intervention of the cellar master for brewing or stirring. The inside of the egg-shaped winemaking tank is animated by a natural vortex that keeps the lees in suspension throughout the process.

At Nomblot we chose this material for its excellent thermal inertia qualities, which avoids sudden temperature variations within the wine making tank. Also, the micro-oxygenation of the ovoid wine tank works the tannins and makes it possible to obtain very aromatic wines.
